It's a Blummin' Blizzard!!!

Monday morning we woke up to a blanket of snow here in Knoxville! We had about 4 inches at our house, but Mom and Dad had about 8 inches in Athens. Daniel had to go into work around 10 a.m. and fortunately my office closed for the day. Daniel's work ended up closing at 2 p.m. so he was able to come home early which made for a great day.

I was able to do a TON of much needed laundry, write all of my Christmas thank you letters, do the dishes, and watch a little t.v. It was a much needed day of resting.

I also made us snow cream! Daniel had never had it before and I grew up eating this delicacy every time it snowed in Athens as a little girl. I knew Daniel would love it so I whipped up a batch. It was so good I thought I would share it with you.

Gather some snow in a bowl (make sure it's the snow on top and not yellow)

Then add in the following ingredients: 1 cup sugar (I use Splenda), approx. 1 Tbs vanilla extract, and milk (just until you achieve the right consistency-close to ice cream):

Stir it all together:


Serve: We ate ours plain but you could serve it with strawberries, chocolate, or even use peppermint extract in addition to the vanilla!
